Dingle Single Malt is a triple-distilled, non-chill-filtered Irish single malt from Dingle Distillery in County Kerry, bottled at 46.3% ABV in a 750ml bottle. It is matured in Pedro Ximénez sherry casks (61%) and ex-bourbon barrels (39%).
The distillery was founded in 2012 in a converted sawmill in Milltown, on the edge of the town of Dingle.
The nose combines honeyed malt and oatmeal cookie with lime zest, Maraschino cherry and pear. The palate runs from tart lemon to baked apple, golden syrup, vanilla and hazelnut, with a light to medium body. The finish is smooth and moderately long, with cinnamon sugar, nutmeg, dark raisin and a touch of espresso.
