Doc Swinson's Garryana Straight Bourbon Whiskey Garry Oak Finish (75cl)

A straight bourbon finished in Garry oak, the only oak native to the Pacific Northwest coast. Doc Swinson's is a Washington State bottler and finisher that began as a four-person team, and this is the most distinctly Pacific Northwestern bottle in its range. It was created by Master Blender Jesse Parker. Garry oak is hard, slow-growing and difficult to work into barrel staves, which is why it is rarely used. Compared with standard American white oak, it is said to push the flavours darker and more resinous: cinnamon turns to clove, caramel to molasses, and the finish gains a wood smoke character quite different from barrel char.
