Dolin Vermouth de Chambéry Rouge

Dolin Rouge is a red vermouth from Chambéry, made by Dolin, a house founded in 1821. It is made in the manner that earned Chambéry the only appellation for vermouth in France in 1932, and is native to the mountains of the Savoy, made with over 50 herbs. The style is light and fresh, with spicy notes and a clean finish. It is made to sit alongside other ingredients, so in a Manhattan it leaves the rye or bourbon audible, even at 1:1, and it also suits a Negroni. It can be served over ice with a citrus twist, or alongside olives, nutty cheeses and cured meats.
