An Anjou from Domaine Pierre Ménard, farmed organically and biodynamically. It centres on a very old plot of untrained bush-vine Chenin, with a small parcel of 10-year-old vines.
The plot faces south on the slope, beside the Varenne de Chanzé and bordering the north-facing Clos des Mailles. The soil is pure grey-green schist with a little phtanite. The old Chenin vines are genetically diverse, with many shot-berried bunches that are airy and ripen in a distinctive way.
The grapes are picked by hand and gently pressed in a pneumatic press. Fermentation and ageing take place in one barrel holding several wines, a stoneware jar and a demi-muid.
