Saturne Vertige is a demi-sec Anjou white made from Chenin affected by botrytis, the noble rot. It is made from several parcels of Chenin picked late, on 14 and 15 October, at around 15 degrees potential alcohol, from the hillsides of Faye d'Anjou above the Layon. The wine is organic and biodynamic.
The grapes were pressed slowly and fermented in barriques, glass demijohns and stainless steel vats. Residual sugar is 27 g/L.
