A 15-year-old Pedro Ximénez sherry from Williams & Humbert, made in Jerez from sun-dried Pedro Ximénez grapes, which concentrate the sugars. It is aged in a solera and criaderas system.
The colour is deep ebony with mahogany glints. The nose is powerful, with dried figs and prunes alongside honey, vanilla and roasted coffee.
On the palate it is velvety and sweet, balanced by a slightly bitter finish that cleans the mouth. Serve it cold, with chocolate desserts, panna cotta, strong cheeses or pâté.
