Doorly's XO Fine Old Barbados Rum (43%)

Doorly's XO is an aged Barbados rum, blended and matured at the Foursquare distillery. The blend is made of rums between 6 and 12 years old, and ageing is finished in Spanish ex-oloroso sherry casks. No sugar is added. The combination of pot and column still distillation with the ageing gives a natural sweetness and a full flavour. This version is bottled at 43%, which is the Barbados standard and gives a little more spice and an oilier texture. The nose has rubber, sherry cask and spice, enough to pass for a sherry-finished whisky. The palate is full and complex, with sherry, vanilla and nuts, and the finish is oily, long and sweet with a trace of sherry.
