Dornoch – 2017 Cask #1 Thompson Bros Inaugural Release (50cl)

This is the first single malt released by Dornoch, bottled in a 50cl size as a single cask. It was distilled on 5 July 2017 and matured in a first-fill ex-Oloroso sherry butt. 893 bottles were released in November 2020. The distillery was set up by brothers Simon and Philip Thompson, who began as bottlers in 2013 and opened Dornoch in a small 19th century fire station in the grounds of Dornoch Castle. They use organic heritage barley varieties such as Plumage Archer and Maris Otter, and a fermentation of 216 hours that may be the longest in Scotland.
