Drappier Clarevallis Extra Brut Champagne

Clarevallis is an organic Extra Brut Champagne from the Drappier family, whose vines lie near the abbey of Clairvaux, founded in 1115 by Saint Bernard. The cuvée takes its name from the abbey. The very low dosage keeps the fruit pure and fine. A long fermentation with native yeasts adds green apple and brioche notes to the aromas of fresh citrus, white flowers and minerals. The palate is lively with lemon and lime, balanced by a creamy texture, white-fleshed fruit, almond and a touch of fresh ginger. It finishes clean and long, with a slightly saline edge.
