It starts as the brand's Small Batch Bourbon, which, once fully matured, is finished in a second, custom toasted new oak barrel to add more sweet oak character. The first barrel is charred and the second toasted. The brand is named after Elijah Craig, who is credited as the first distiller to age whiskey in charred oak barrels. On the palate, baking spices and pepper give way to milk chocolate with a hint of smoke.
