Fercullen 21 Year Old Irish Whiskey (75cl, 46%)

Fercullen 21 Year Old is a single malt Irish whiskey from Powerscourt Distillery in Enniskerry, Co. Wicklow, in a 750ml bottle at 46% ABV. It marries three parts: 70% malt matured for 21 years in ex-bourbon barrels, 20% with an Oloroso sherry finish and 10% with a Pedro Ximénez sherry finish. The sherry-finished malt was matured in bourbon casks first, then spent around two further years in European oak sherry casks. The whiskey is bottled non-chill filtered and at natural colour. The nose is honeydew melon, lychee, vanilla fudge, pear drops and soft leather. The palate layers vanilla fudge and dried fruits with dark chocolate, orange oil and cracked hazelnuts. The finish brings sweet fudge, candied cherries, fruit cake and drying spices.
