FEW Immortal Rye is a straight rye whiskey from FEW Spirits in Evanston, Illinois, bottled at 46.5% in a 75cl bottle. The mash bill is 70% rye, 20% corn and 10% malted barley.
It begins as cask-strength straight rye. Rather than being reduced with water, it is brought down to bottling strength with a cold extraction of 8 Immortals oolong tea, a proofing method described as a first.
The nose shows ripe peach, honey, delicate florals and rye spice with a hint of citrus. The palate moves from citrus and stone fruit to brown sugar, dark chocolate and dragon fruit, with white and black pepper and ginger. The finish is crisp, spicy and fruity, with an earthy tea echo.
