A high-rye bourbon distilled at FEW Spirits Distillery in Evanston, Illinois, in a 750ml bottle at 45% ABV. The mashbill is 70% corn, 20% rye and 10% two-row malted barley, with all the grain grown on farms within 100 miles of the distillery. It is fermented with a peppery Belgian Saison-style yeast, then aged in small barrels of 5 to 30 gallons made from Minnesota oak. The nose offers cinnamon, clove, fresh hay and corn sweetness. Caramel and Demerara sugar open the palate, followed by cinnamon, nutmeg, black pepper, pine resin and vanilla. The finish is medium and dry, with baking spice and toasted oak.
