Four Pillars Rare Dry Gin (75cl, 41.8%)

Four Pillars Rare Dry is a pot-distilled dry gin from the Yarra Valley in Australia, about an hour outside Melbourne. The distillery makes gin and nothing else, and this is its flagship. The botanicals are built around whole gin-steamed oranges, native lemon myrtle and Mediterranean citrus, with cardamom, coriander, star anise, Tasmanian pepper berry leaf and a touch of Asian spice alongside the juniper. The character is bright and fruit-forward, with orange zest aromas and a creamy texture. It works well in a Negroni, or in a Martini garnished with a slice of orange in place of an olive. Bottled at 41.8% ABV.
