Garrison Brothers Bottled in Bond is a straight bourbon from Hye, Texas, produced in small batches and bottled at 50% ABV, the 100 proof required by the Bottled-in-Bond standard. The mash bill is wheated, mainly corn with wheat and malted barley, and the bourbon matures in charred American oak.
The distillery received its permit in 2006. Large daily temperature swings in the Texas Hill Country push the spirit in and out of the barrel wood, which speeds the extraction of caramel, vanilla and spice.
The nose has caramel, maple, vanilla bean and toasted oak. The palate brings maple sweetness, sassafras, caramelised chocolate and brown sugar, and the finish is long and warming, with toffee, roasted almond, plum and oak spice.
