Garrison Brothers – Lady Bird Bourbon (57%)

Lady Bird is a honey-infused Texas bourbon from Garrison Brothers in Hye. It begins as the distillery's small-batch Texas Straight Bourbon, aged for about four years in new American white oak barrels. The bourbon is then infused with Texas wildflower honey for eight to nine months and finished for roughly three years in French XO cognac casks. It is bottled at 57% ABV in limited quantities. The nose offers wildflower honey, caramel, candied raisins, dark cherry and charred oak. On the palate there is honeyed sweetness, dark chocolate, black cherry, vanilla and baking spice with a peppery warmth. The finish is long, with sticky honey, oak char, raisin and fig.
