George Dickel – Original #12 (75cl, 45%)

George Dickel Original #12 is a straight Tennessee whisky from the Dickel distillery in Tullahoma, bottled at 45% (90 proof). The mashbill is 84% corn, 8% rye and 8% malted barley. Its method is chill charcoal mellowing. The distillate is chilled, then placed in a vat packed with charcoal and left to soak for several days before draining, rather than dripping through a column of charcoal. The whisky is then aged in new charred American oak barrels. The nose shows sweet corn, vanilla, butterscotch, roasted pecans and dried figs. The palate is round and grain-led, with allspice, dark chocolate, bitter orange, cherry and a little tobacco. The finish is long and warm, with sweet corn, tobacco leaf, maple butter and gentle wood smoke.
