Gin Xoriguer Mahon (70cl, 38%)

A gin from the island of Minorca in the Balearic Islands, produced by the Xoriguer distillery on the edge of Mahon harbour. It is distilled in old copper stills fired by wood, using a traditional method, with an alcohol base from high-quality grains and hand-picked juniper berries combined with aromatic herbs and citrus. The gin is clear and crystalline. On the nose it is fresh and balsamic, with juniper clearly dominant yet balanced by citrus nuances and a light touch of aromatic herbs. On the palate it is soft but complex, with a persistence that recalls the fresh sea breezes of Minorca.
