This is an 11 year old Speyside single malt from GlenAllachie, bottled at 48% vol. It is part of the Wood Collection, which Master Distiller Billy Walker adds to from time to time with whiskies finished in different types of sherry cask. It is non-chill-filtered and of natural colour.
The whisky first matures in ex-bourbon casks of American oak, then is finished in Palo Cortado sherry puncheons and hogsheads.
The nose offers dried plum, honey and ginger, then creamy butterscotch and oriental spice. The palate is full and complex, with dark forest fruit, plum jam, forest honey, coffee and dark chocolate. The finish is long and balanced between fruit and dry espresso, nuts and red wine tannins.
