GlenAllachie 11 Year Old Palo Cortado Sherry Cask Finish is an unpeated Speyside single malt from the distillery's Wood Collection, overseen by Billy Walker.
It spent over 9 years in American oak ex-bourbon barrels, then over 2 more years in hand-selected Palo Cortado sherry puncheons. It is bottled at 96 proof (48% ABV), non-chill filtered and of natural colour.
The nose offers roasted almonds, dark honeycomb, espresso, stewed plums, dried apricots, orange zest and a touch of pipe tobacco. The palate is rich and oily, with treacle tart, mocha, candied ginger, figs and marzipan. The finish is long, warm and drying, with charred oak, cocoa and roasted walnuts.
