This is a 12 year old Speyside single malt from The GlenAllachie, part of the Wood Collection selected by Billy Walker. It was finished in Sauternes wine hogsheads and bottled at 48% in a 70cl bottle, without colouring or chill-filtration.
Sauternes is the French dessert wine from Bordeaux, and the finish is described as bringing ripe peach, caramel sauce, ginger and ice cream.
The nose offers honeycomb, butterscotch, candied ginger, mocha and peach. The palate brings tropical fruit, heather honey and baking spices, then demerara sugar, coconut and marmalade. The finish has citrus, caramel and ice cream.
