Glenmorangie – Signet (75cl, 46%)

Glenmorangie Signet is a Highland single malt Scotch whisky from Tain, bottled at 46% in a 75cl bottle and not chill-filtered. It was created by Dr Bill Lumsden and carries no age statement, though it includes some of the distillery's oldest stocks. It marries two barleys: heavily roasted chocolate malt barley, distilled once a year, and Cadboll barley grown on the distillery's own farm. The whisky rests in bourbon casks for creaminess, sherry casks for sweetness and virgin charred oak for spice. The nose is coffee, ginger and cinnamon with dark chocolate, tiramisu, dark toffee, candied orange peel and fruit cake. The palate is spicy, with bitter mocha, hazelnuts and butterscotch, and the finish runs to cappuccino, amaretto, chocolate-coated raisins and orange.
