Goisot Bourgogne Côtes d'Auxerre

A white wine from a biodynamically farmed parcel in Côtes d'Auxerre, made from Chardonnay vines 10-30 years old on south-facing slopes at about 225-250 metres. The soil is marl, hard white limestone with fossils, clay and topsoil. In the cellar it is naturally vinified with native yeasts, natural settling and no filtration, and aged only in temperature-controlled stainless steel tanks. Straw-gold in colour, it has elegant acacia blossom, citrus and ripe tropical fruit on the nose, with a cool mineral limestone style reminiscent of Chablis. The palate shows crisp white peach, lychee, passion fruit, mango, cinnamon and vanilla, with harmony between dryness, minerality and elegance.
