A sweet, aromatic cream sherry from González Byass, the house founded in 1835 and now farming 800 hectares of its own vineyards. It comes in a 75cl bottle. Solera 1847 is a blend of Palomino Fino (75%) and Pedro Ximénez (25%). The two sherries first mature separately for about three years, then are brought together and aged for a further five. The nose shows raisins, dried figs, vanilla and oak. The palate is soft, with sweet notes of figs, raisins and walnuts and a touch of caramel, leading to a lightly nutty finish. It suits desserts such as ice cream and apple tart, and also spicy cheeses.
