Hard Truth Sweet Mash is a bottled-in-bond bourbon at 50% ABV, distilled and aged on site at Hard Truth Distilling Co. in Nashville, Indiana. Bottled in bond means a single distilling season, one distillery and at least four years in new charred oak.
The mash bill uses four grains: 78% corn, 9% wheat, 9% rye and 4% malted barley. It is a sweet mash, so every fermentation starts fresh with no backset.
The nose and palate bring butterscotch, caramel and brown sugar over toasted grain, with dark honey, red berries, cherry, vanilla and toffee. The rye adds cracked black pepper and baking spice mid-palate, and the medium finish carries oak, caramel, cherry and bruléed sugar.
