Harvey's Bristol Cream is a cream sherry at 17.5% ABV, here in a 100cl bottle from the 1990s. The style grew out of work in the cellars of John Harvey & Sons of Bristol in the 1860s and 1880s, and became the house's main product.
The blend draws on wines from fifty different soleras, including Fino, Amontillado and Oloroso. Pedro Ximénez from sun-dried grapes is added for sweetness and for the rich, creamy aftertaste that marks the sherry out. The house uses its own vineyards in Jerez Superior, with Palomino as the main grape.
