Hatozaki Umeshu Cask Finish 12 Years is a Japanese whisky from the Akashi group, in a 70cl bottle. The name comes from the oldest lighthouse in Japan, which stands in Akashi harbour.
It is a blend of single malts aged for 12 years in American oak, then finished for six months in casks that previously held umeshu, a Japanese plum liqueur.
The nose is soft and lightly floral, with violet, lavender, cherry blossom and raisin. The palate is fruity and gently spiced, with acacia honey, apricot, lychee and vanilla. The finish is persistent and lightly toasted.
