Hellyers Road – Aurora Australis

Hellyers Road Aurora Australis is a single malt from Tasmania, distilled from local malted barley and matured in American oak casks. The maturation takes place in damp warehouses, and the whisky has a deep golden colour. On the nose it shows ripe pear and peach with a floral touch and vanilla, then honey, buttery notes and, with air, cinnamon and a little nutmeg. The palate is silky, with ripe fruit, blond caramel and honey, discreet oak, and later dark chocolate and biscuit. The finish is long and warm, returning to honey, toasted wood, candied fruit and vanilla.
