Hibiki 40 Years Old (70cl)

A 40-year-old Japanese blended whisky from Suntory, in a 70cl bottle. It combines Yamazaki malt, Hakushu malt and Chita grain whisky, all matured for four decades. Hibiki was launched in 1989, and its name means resonance or echo in Japanese. The component whiskies for this bottling matured in a mix of American white oak, Spanish sherry oak and Mizunara Japanese oak casks. The colour is a deep amber. On the nose there is Mizunara incense and sandalwood alongside dried fruit from the sherry casks. The palate is silky and concentrated, and the finish is very long, with Mizunara incense and dried fruit continuing to the close.
