High n' Wicked – Rose Tattoo Single Malt Irish Whiskey (75cl, 59.9%)

This is a cask strength single malt Irish whiskey from County Carlow, made from 100% locally sourced malted barley and triple distilled in copper pot stills. It is bottled at 59.9%, non-chill filtered and free from additives. It was matured in ex-bourbon barrels, then finished for eight months in French oak that previously held Famiglia Pasqua Amarone. The nose shows caramelised pear, apple pie, brown sugar and candied cherry, with cinnamon crumble, Earl Grey tea and a trace of fresh herbs. The palate is full and commanding, with cocoa, honey butter and ripe orchard fruit. It finishes dry, with black tea and fine tannins from the Amarone cask.
