This is the first Bottled-in-Bond bourbon from High West, made in Wanship, Utah, at 4,000 feet above sea level. It was distilled in a single season, aged for over four years and bottled at 100 proof (50%) under the Bottled-in-Bond Act of 1897.
The mash bill is 64% Colorado corn and 36% Idaho rye, fermented with three yeast strains.
The nose combines Honeycrisp apple, golden raisins, kumquat zest, wildflower honey, malted chocolate and toasted oak. The palate brings peach and cherry cobbler, gingersnaps, roasted marshmallow and cocoa nibs. The finish is long, with almond, brown butter and warm oak.
