High West – Bottled in Bond Bourbon (75cl, 50%)

This is a Bottled-in-Bond bourbon from High West, the first in the distillery's history. It was produced entirely in-house at the Wanship, Utah distillery and aged for 4 years and 5 months. It meets the Bottled-in-Bond Act of 1897 and is bottled at 100 proof, in a 75cl bottle. The mash bill is 64% yellow corn and 36% rye, with no malted barley, fermented with three yeast strains from Colorado corn and Idaho rye. It joined the core range in August 2025. The nose brings Honeycrisp apple, kumquat, golden raisins and malted milk chocolate. On the palate come peach and cherry cobbler, gingersnaps and roasted marshmallow, leading to a long, soft finish of almond, brown butter and warm oak.
