Highland Dream 8 Year Old (70cl)

Highland Dream 8 Year Old is a blended Scotch whisky matured for eight years in sherry and bourbon oak casks. The blender Gordon J. Doctor chose malts from Highland distilleries and aged them mainly in sherry butts. Its style draws on nineteenth-century blends. The idea for it came at the Glenfarclas distillery, where a bottle dated around 1896 is kept and a replica was made, a task that took three years. Sherry forms the base of the flavour, joined by vanilla and honey.
