This is the 2023 release of Highland Park 21 Year Old, a single malt from Orkney bottled at 46% in a 70cl bottle. It is a vatting of 36 casks: first-fill European and American sherry hogsheads, bourbon hogsheads, refill hogsheads and ex-Rioja casks. All were filled between 1998 and 2001, so every cask has matured for at least 21 years. Master Whisky Maker Gordon Motion selected them personally.
Highland Park uses peat to dry its barley, and the distillery was founded in 1798 on Orkney.
The nose brings tropical fruit, toasted almonds, nutmeg and peat smoke. On the palate come citrus peel, caramelised apples, honey, cinnamon and paprika, with peat smoke again alongside.
