This is the second release in the Highland Park Cask Strength series, a single malt from Orkney bottled at 63.9% with no water added to reduce it.
Gordon Motion, Highland Park's Master Whisky Maker, chose mainly sherry-matured European and American oak casks, together with just a few ex-bourbon casks.
The nose offers summer rose, ripe pear and fresh coconut over aromatic smoke. On the palate come poached pear, rich almond cake, honey and a twist of salted liquorice. The long finish has toasted oak, ripe fruit, black pepper and sweet aniseed.
