Highland Park – Cask Strength Release No. 3

Highland Park Cask Strength Release No. 3 is an Orkney single malt bottled straight from the cask, with no water added to lower its strength. It comes from the distillery at Kirkwall. It was made from three types of cask: first-fill sherry-seasoned American and European oak, plus a smaller share of refill casks. A higher proportion of Orkney peat was used for malting, giving a pronounced smoky character. The nose has smouldering peat and lightly charred oak, with honey-glazed lemons and crushed aniseed. On the palate come ripe mango, cloudy heather honey and whipped vanilla cream with a hint of violet. The finish is long, with pink grapefruit peel, sponge cake and heather peat smoke.
