Highland Park – Triskelion Single Malt Scotch Whisky (70cl, 45.1%)

Highland Park Triskelion is a single malt Scotch whisky created by three whisky makers working together: Gordon Motion, Max McFarlane and John Ramsay. It was bottled in 2019 at 45.1% ABV in a 70cl bottle. The whisky explores how wood and cask seasoning shape flavour. It is built from first-fill sherry-seasoned Spanish oak butts, first-fill sherry-seasoned American oak casks, and ex-bourbon barrels and hogsheads, with some refill casks added for a touch of softness. The tasting notes mention tangy Seville oranges, sultanas and raisins, apricots and heather honey, coriander seeds and aromatic peat smoke.
