Hirsch 'The Bivouac' Bourbon Whiskey (75cl, 50%)

Hirsch 'The Bivouac' is a bourbon blended from two straight bourbons distilled in Bardstown, Kentucky, and bottled at 50% ABV in a 750ml bottle. It is a nod to the adventurous spirit of the A.H. Hirsch Reserve. Ninety-five per cent of the blend is a bourbon of 74% corn, 18% rye and 8% malted barley, aged at least three years. The remaining five per cent is a high-malted-barley bourbon of 72% corn, 13% rye and 15% malted barley, aged at least six years. Each batch draws on about 160 barrels. The nose is caramel and vanilla over toasted oak, with rye spice rising through it. The palate brings brown sugar, baking spice and malted-grain depth, and the finish is warm and long, with lingering spice and oak.
