Hirsch The Bivouac is a bourbon made by combining two straight bourbons distilled in Bardstown, Kentucky. The name refers to a temporary camp without a tent, and the bottle is meant as a nod to adventurous travellers.
About 95% of the blend comes from a mashbill of 74% corn, 18% rye and 8% malted barley, aged for a minimum of three years. The other 5% is distilled from a mash of 72% corn, 13% rye and 15% malted barley, aged for at least six years. The mashbill is inspired by A.H. Hirsch Reserve 16-year-old.
It is bottled at 100 proof (50%).
