A Kentucky straight bourbon released under the Hirsch Selected Whiskeys banner and bottled at barrel proof, 56.3% ABV, without dilution. The mash bill is about 72% corn, 13% rye and 15% malted barley.
It is matured in new charred American white oak, then finished for an additional period in 30-year-old Hine Cognac XO casks of French oak.
The nose combines dark cherry and plum with charred citrus peel and baking spice, over vanilla, toffee and almond paste. The palate is caramel and brown sugar, dried fig and date, dark chocolate and rye spice. The finish is long and warm, fading into dry oak, cedar and a trace of leather or tobacco leaf.
