Hyde No. 9 is an eight-year-old triple-distilled Irish single malt from Alan and Conor Hyde of Cork. It was distilled in 2012 and bottled in 2020 at 43%, in a numbered run of 5,000 bottles.
The whiskey finished its maturation in tawny port casks, which Conor Hyde chose himself at a small family-run port quinta in the Douro Valley, in keeping with the Hyde motto that it is all about the wood.
The nose is dark dried fruit with a little cinnamon, nutmeg and blackberry. On the palate come green apple, honey, citrus and spice, with vanilla behind. The finish is long and rich, spicy, with buttery vanilla.
