Ikikko Japan 8 Year Koji Whisky Sherry Cask

Ikikko Japan 8 Year is a Japanese koji whisky matured in sherry casks, from Iki Island in Nagasaki Prefecture. Distilling on the island typically uses a grain bill of one third koji rice to two thirds barley, as both crops grow well there. Iki Island is also known as the birthplace of barley shochu, in the 16th century. The nose has ripened dark fruits, white pepper and allspice, with subtle citrus. On the palate come cardamom, cream and tangerine, then clean spices with herbal tea and steamed rice. The finish brings distant sea salt, dried wine and oily peppermint over candied sweetness.
