Illicit New Tom Gin (70cl, 40%)

This is a gin from Illicit Spirits, a revival of the classic Old Tom style, a sweeter variation on the original Dutch genever. It is updated with pink peppercorns, tonka beans, rosehips and nasturtium flowers. It is made in an urban craft distillery beneath the tracks of Glasgow Central Station, beside the River Clyde, which specialises in inventive twists on traditional spirits.
