Invivo X, Sarah Jessica Parker Rosé

A rosé from southern Provence, made by Invivo in collaboration with Sarah Jessica Parker and a family-owned winery in Lambesc. The grapes come from vineyards around Lambesc, Saint-Cannat and Rognes. The grapes ferment as whole bunches after a few hours of maceration, which gives colour and texture. They are then pressed lightly and fermented cool in stainless steel until almost completely dry. The wine rests on its fine lees in steel for structure, and no malolactic fermentation keeps it lively.
