Isle of Raasay – Dùn Cana Sherry Quarter Cask Release (70cl, 52%)

Isle of Raasay Dùn Cana Sherry Quarter Cask Release is an annual limited edition single malt from the Isle of Raasay distillery in Scotland. It is made from peated and unpeated spirit, matured first in ex-American rye casks and then finished for six months in 125-litre Pedro Ximénez and Oloroso sherry quarter casks. It is bottled at 52%, with natural colour and without chill filtration. The name comes from Dùn Cana, the flat-topped volcanic peak on Raasay's skyline. Official notes describe peppery spice, dried sultanas and vanilla on the nose, rich sherry fruit, oak spice and light wood smoke on the palate, and a salty chocolate finish with lingering spice.
