Jacob's Pardon 8 Year is a blended American whiskey sold as a bourbon, assembled by the spirits writer Paul Pacult from Indiana and Tennessee stocks. Some 86% is a 15-year-old light corn whiskey from MGP, aged in used barrels. The other 14% is an 8-year-old Tennessee sour mash whiskey matured in new charred oak. The age statement reflects the youngest component, and the strength varies by batch, from 48.6 to 54.65% ABV.
The nose offers buttered sweet corn, brown sugar, espresso and sugar cookie dough. The palate is buttery and creamy, with honey, toffee, vanilla bean, cinnamon bun and a dusting of black pepper. The finish is long and sweet, with biscuit, toasted grain and gentle wood tannins.
