Jacob's Pardon Small Batch American Whiskey Recipe 2 is an eight-year-old Tennessee whiskey bottled at 54.65% ABV, blended by Paul Pacult. The mash bill is 70% corn, 22% rye and 8% malted barley, which makes this the rye-forward recipe, and it has no secondary finish.
The name honours Jacob and Abner Taub, Prohibition-era bootleggers caught in a 1929 sting and pardoned by President Franklin D. Roosevelt six years later.
The nose combines oaky wood, candy corn, malted cereal, butterscotch, pecan and maple syrup. The palate is warming, with pecan, vanilla, cinnamon, black pepper and cereal grain. The finish is long, with maple fading into cereal notes.
