A Kentucky straight bourbon from the James E. Pepper Distillery in Lexington, bottled uncut and unfiltered at barrel proof in a 750ml bottle. Strength varies by batch, from 52.7% to 57.5% ABV. The average age is over five years.
The mashbill is high in rye and made up of corn, rye, malted barley and malted rye. It was filled into new Kentucky oak barrels that were both toasted and charred, at a proof below the legal maximum.
The nose shows toasted oak, apricot, French vanilla and walnut. Cinnamon spice gives way to golden raisins, stewed peaches and marzipan on the palate, and the finish is medium-long with vanilla, citrus peel and nutmeg.
