This is a Japanese single malt finished in bourbon and Port Ruby casks, made in collaboration with the World Whiskey Society and handcrafted by Chip Tate. It was distilled in Japan from 100% Australian malt and is a limited release.
On the nose there is wine-soaked ripe pear and crème brûlée, with hints of golden raisin and baking spices. The palate is malty with a rich umami character, and the malt stays to the fore of the cask finish. The finish is long and dry, with dark brown bread and salted caramel.
