Jean-Luc Pasquet L'Organic Cognac Folle Blanche L.XIII (70cl, 49.6%)

This is a Grande Champagne cognac from Jean-Luc Pasquet, made entirely from organically grown Folle Blanche. The estate has been certified organic for over twenty years, and the variety makes up less than one per cent of the grapes grown for cognac. The grapes are harvested, distilled and aged separately for at least ten years, first in new French oak for a year and then in older casks. It is bottled in small batches at 49.6% abv, without colouring, sugar or chill-filtering. On the nose it shows mirabelle plum and peach with menthol and orange peel. The palate brings the fruit together with soft honey and spice such as nutmeg.
